    Every month we chose a Region of Italy and create an original Set Menu. We focus on local specialties, lesser well known dishes, and of course the signature foods from that specific area.

    Normally its a 4-5 courses with matching wines and cocktails to complete the experience.

    ANTIPASTO:

    ACQUASALE

    A poor plate popular in all South Italy.

    Use to be the only meal at lunch time for fisherman and farmers.

    It is made with bread, fresh tomato, oregano and extra virgin oil. 

    RAFANATA

    Frittata with grated horseradish and pecorino cheese. Use to be made in carnival time. Many variations throughout the region.

    PRIMO:

    FUSILLI CON MOLLICA

    Famous pasta with breadcrumb, chilli, anchovies and garlic.

    SECONDO:

    BACCALA’ AD INSALATA CON PATATE E PEPERONI CRUSCHI

    Boiled codfish served with a side of boiled potatoes and dried red

    capsicum, these last called “cruschi” because in dialect it means crunchy.

    DOLCE:

    TORTA LUCANA ALLA RICOTTA 

    Ricotta tart usually done at easter time.

    CANEDERLI – sometimes referred to as gnocchi, originated in northern Italy where Germanic culture is prevalent. Often made with bread instead of flour, they can include a wide range of ingredients such as meats, proscuitto, spinach, speck, and cheese.

    UMBRIA –.The charm of Umbria derives from its fusion of art, nature, peace and calm, the inspirations behind its various localities that comprise Renaissance masterpieces and small Medieval towns embedded in the hills. Small region with great tastes that satisfy all palates: the best dish for meat lovers is pork, masterfully treated by Umbrian butchers who turn the meat into delicacies like sausages,tasty hams and salami, like those of Norcia, to eat with unsalted bread that brings out the taste.

    Spaghetti col Rancetto

    This famous typical plate of Umbria region takes its name from the “rancid” taste of smoked pancetta use for his sauce. It’s a simple plate of spaghetti with sugo, pecorino, marjoram & pancetta. 

    SECONDO

    Salsicce all’uva

    Typical main dish of this region, pan fried italian sausages cooked with grapes and fennel seeds.

    DOLCE

    Fritelle di riso 

    Usually done in carnival time, these lightly fried balls are make with rice,milk, cinnamon,lemon,rum
